The vines grow on deep, soft volcanic ash with small stones in the mix, facing north on Mount Etna. The wine ferments at low temperatures, sees malolactic fermentation, and is aged in large French oak barrels for 14 months. This is 'Grand Cru' Etna: rich, full bodied, saline, acidic, complex, and just mind blowing. Pair it with cavatelli and a sausage ragu,
